Wheat-free, optional dairy-free recipe for about 10 killer banana pancakes.

2 large eggs (egg re-placer – your choice)

1 banana

1/2 cup milk (cow, goat, almond, rice – your choice)

1 cup oat flour (or almond flour if you want to go gluten-free too)

1/2 cup almond meal

1/2 tsp salt

1/2 tsp baking soda

1/2 tsp cinnamon

Organic extra virgin coconut oil to cook the pancakes with.

In a large bowl Beat eggs, smoosh bananas in there, then add the milk and mix it all up

In another bowl mix the flour, baking soda, almond meal, salt and cinnamon together.

Put the flour in the wet ingredients and mix it all up to make a nice batter.

Heat some coconut oil in a large skillet over medium-low heat. Spoon some of the batter into the pan, smooth it out a little bit if you need to because this batter seems to be a little thick.

Flip the pancakes when the bottoms have browned, about 3 minutes, and cook the other side another 1 or 2 minutes or until desired doneness.
